A nutrient-dense longevity salad loaded with leafy greens, chickpeas, seeds, avocado, and olive oil lemon dressing.

Ingredients

  • 2 handfuls mixed leafy greens
  • 1/2 cup chickpeas
  • 1/2 cup cherry tomatoes
  • 1/4 cup cucumber
  • 1/4 cup shredded red cabbage
  • 2 tablespoons pumpkin seeds
  • 1 tablespoon sunflower seeds
  • 1/4 avocado
  • 2 tablespoons parsley
  • 2 tablespoons olive oil
  • Juice of 1/2 lemon
  • 1 teaspoon Dijon mustard
  • 1 garlic clove
  • Salt and pepper

Instructions

  1. Add leafy greens to a large bowl.
  2. Add chickpeas, tomatoes, cucumber, cabbage, seeds, avocado, and parsley.
  3. Whisk olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper together.
  4. Pour dressing over salad.
  5. Toss thoroughly until coated.
  6. Serve immediately.

Notes

Add quinoa or farro for extra fiber and satiety. Fresh herbs boost flavor without processed dressings.
