Ingredients

Scale
  • 1 large sweet onion, sliced into 1/2-inch rounds and separated into rings
  • 1 large egg, beaten
  • 1 cup shredded whole-milk mozzarella cheese
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 cup blanched almond flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon fine salt
  • 1/4 teaspoon black pepper
  • Cooking spray or olive oil spray

Instructions

  1. Preheat the oven to 400°F (205°C) or air fryer to 375°F (190°C).
  2. Pat the onion rings completely dry with paper towels.
  3. Place beaten egg in one bowl.
  4. Mix mozzarella and parmesan cheese in a second bowl.
  5. Combine almond flour, garlic powder, paprika, salt, and pepper in a third bowl.
  6. Dip each onion ring into the egg.
  7. Press the ring into the cheese mixture until fully coated.
  8. Coat the ring in the almond flour mixture and shake off excess.
  9. Arrange breaded onion rings on a wire rack over a parchment-lined baking sheet or in an air fryer basket.
  10. Spray lightly with cooking spray.
  11. Bake for 15 to 18 minutes or air fry for 10 to 12 minutes.
  12. Flip halfway through cooking.
  13. Cook until deep golden brown and crispy.
  14. Serve immediately with your favorite keto dipping sauce.

Notes

For extra crispy onion rings, use freshly grated parmesan and avoid overcrowding the pan or air fryer basket. Sweet onions such as Vidalia provide the best flavor and texture. Leftovers can be reheated in the air fryer for maximum crispiness.
