Ingredients

Scale
  • 2 boneless chicken breasts
  • 1 cup buttermilk
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 1/2 cups marinara sauce
  • 2 tablespoons olive oil
  • 2 hoagie rolls or ciabatta bread rolls
  • Fresh basil leaves
  • Salt and black pepper
  • Red pepper flakes (optional)

Instructions

  1. Place chicken breasts in buttermilk for 30 minutes to tenderize.
  2. Preheat oven broiler.
  3. Mix breadcrumbs, Parmesan cheese, salt, and black pepper in a bowl.
  4. Remove chicken from buttermilk and coat evenly in breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat.
  6. Cook chicken until golden brown and crispy on both sides.
  7. Toast hoagie rolls lightly until crisp.
  8. Spread marinara sauce on the bottom half of each roll.
  9. Place crispy chicken cutlets onto the bread.
  10. Spoon additional marinara sauce over the chicken.
  11. Top generously with shredded mozzarella cheese.
  12. Place sandwiches under the broiler until cheese melts and bubbles.
  13. Finish with fresh basil and red pepper flakes if desired.
  14. Close sandwiches and serve immediately.

Notes

Use freshly shredded mozzarella for the best melt and texture. Toasting the bread prevents the sandwich from becoming soggy after adding marinara sauce.
