Are Chorizo and Egg Good? The Ultimate Guide to Flavor, Nutrition & Pairings

Are Chorizo and Egg Good? A sizzling pan of chorizo and scrambled eggs cooking together.

Smoky, savory chorizo paired with creamy scrambled eggs creates a classic, satisfying breakfast with bold flavor and great protein. Whether served in tacos, burritos, or a skillet hash, this duo is a timeless favorite with endless variations.

Ingredients

Scale
  • 8 oz Mexican chorizo (or turkey chorizo for a leaner version)
  • 4 large eggs
  • 1 tablespoon milk or water (optional, for fluffier eggs)
  • Salt and pepper to taste
  • Optional add-ins:
  • ½ cup diced onions
  • ½ cup diced bell peppers
  • ¼ cup chopped cilantro
  • Sliced avocado, for serving
  • Tortillas, for tacos or burritos
  • Shredded cheese or queso fresco
  • Fresh salsa or pico de gallo

Instructions

  1. Heat a skillet over medium heat. Add chorizo and cook for 6–8 minutes, breaking it up until browned and slightly crispy. Drain excess grease if needed.
  2. If using onions and peppers, add them to the pan and sauté until softened, about 3–4 minutes.
  3. In a bowl, whisk eggs with milk or water and a pinch of salt and pepper.
  4. Reduce heat to low and pour the eggs into the pan with the cooked chorizo. Stir gently until eggs are fully cooked but still soft.
  5. Remove from heat and sprinkle with chopped cilantro, if using.
  6. Serve hot with tortillas, avocado, salsa, or your favorite toppings. Great in breakfast tacos, burritos, or on toast!

Notes

Use turkey or chicken chorizo for a lighter option. Pair with black beans, potatoes, or veggies like spinach for a more balanced meal. Try it in an omelet or stuffed peppers for fun variations. Cook chorizo first to render fat and deepen flavor.
