Ingredients

  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1/4 cup maple syrup or honey
  • 1/4 cup melted coconut oil or butter
  • 1 tsp vanilla extract
  • 1 1/2 cups gluten-free oat flour or almond flour
  • 1/2 cup gluten-free rolled oats
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • Optional: 1/4 cup chopped walnuts or dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
  2. In a large mixing bowl, mash the bananas.
  3. Add eggs, maple syrup, melted oil, and vanilla extract. Whisk until smooth.
  4. Stir in oat flour, oats, baking soda, cinnamon, and salt. Mix until just combined.
  5. Fold in optional mix-ins like nuts or chocolate chips.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use almond flour for a grain-free version.

Add flaxseed or chia for extra fiber and protein.

Store in the fridge for up to 5 days, or freeze slices for quick snacks.
