A healthier twist on classic banana bread, this version uses cottage cheese for an ultra-moist, protein-rich loaf without compromising flavor.

Ingredients

  • 3 ripe bananas, mashed
  • 1 cup cottage cheese (full-fat or 2%)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 ½ cups almond flour or whole wheat flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • Optional: 1 tsp cinnamon
  • Optional: ½ cup chopped nuts or chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
  2. Mash the bananas in a large bowl.
  3. Whisk in the cottage cheese, eggs, and vanilla extract.
  4. Fold in the flour, baking soda, and salt (plus cinnamon or add-ins if using).
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 45–55 minutes, or until golden and a toothpick comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For smoother texture, blend cottage cheese before mixing. Use parchment and a cooling rack to avoid soggy bottoms.
