  • 6 oz high-quality dark chocolate (60–70% cacao), chopped
  • 3 tablespoons unsalted butter
  • 3 large eggs, separated
  • ¼ cup granulated sugar
  • 1 cup heavy whipping cream, cold
  • 2 ripe gourmet bananas (such as baby bananas or red bananas), sliced
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Cocoa powder or shaved chocolate, for garnish

Instructions

  1. Melt chocolate and butter using a double boiler or in the microwave in 20-second intervals, stirring until smooth. Let cool slightly.
  2. Whisk in egg yolks one at a time into the melted chocolate until fully incorporated.
  3. In a separate bowl, beat egg whites with a pinch of salt until soft peaks form. Gradually add sugar and beat to stiff peaks.
  4. Whip cold heavy cream with vanilla extract until soft peaks form.
  5. Fold whipped cream into the chocolate mixture gently.
  6. Carefully fold in the egg whites in two additions to maintain airiness.
  7. Spoon mousse into serving glasses and refrigerate for at least 2 hours.
  8. Top with banana slices and garnish with cocoa powder or shaved chocolate before serving.

Notes

For a caramelized twist, sauté banana slices in butter and brown sugar. For a dairy-free version, use coconut cream and dairy-free chocolate. Intensify flavor with espresso powder or orange zest. Prepare mousse up to 24 hours ahead and add bananas right before serving.
